Season 11 of MEXICO — ONE PLATE AT A TIME WITH RICK BAYLESS centers on the vibrant food scene and burgeoning chef movement in the Yucatán Peninsula, home to the Mayans, North America's largest indigenous population. Known as one of the world's great cuisines, Yucatán dishes share many of the basic ingredients and culinary practices typically used in the rest of Mexico. However, its unique location puts the peninsula in a position to welcome cultural influences, ingredients and flavors from around the globe, including Spain, Lebanon, Cuba, Africa and the Caribbean. Unique Yucatecan ingredients, such as achiote and limas, along with pit-cooking techniques, also help set the cuisine apart from other food in the region. In the new season, Rick takes viewers on a journey as seen through the eyes of the capital's passionate chefs, Playa del Carmen's fishermen, and eco-minded restaurateurs. Episodes feature a prominent chef in his or her acclaimed restaurant or establishment preparing a dish and guiding Rick on a tour of their culinary influences, ranging from bustling food markets to inspirational restaurants. Ever the consummate cooking teacher, Rick translates the intricate dishes and native Mayan recipes of the Yucatán into everyday enjoyment for the at-home cook. Rick is the recipient of the 2016 Julia Child Award from the Julia Child Foundation for Gastronomy and the Culinary Arts.
